How to choose a pineapple
You have to know how to choose the right pineapple. First, you should pay special attention to the freshness of the pineapple leaves and the color of their skin. The leaves should pull out easily, if not, it means that the pineapple is not ripe yet. You can buy it, but only if you want it to ripen for a while. The fresh and ripe fruit should have a golden color. The dull color of the pineapple indicates it has been stored for a long time and is no longer fit for consumption, it is spoiled. Such fruit is dangerous to eat for pregnant women, as it has abortive properties.
A good ripe pineapple has a much richer flavor and sweetness than a canned one. Cutting the hard, bumpy rind (not to mention the inedible core) of pineapple can seem like a daunting task. In fact, there is a very simple method of peeling the pineapple rind.
When shopping, choose a pineapple that has a firm, golden brown rind (not too green) with green loose leaves (not brown or shriveled). A ripe pineapple will have a strong, fresh pineapple smell.

Cut off the top and bottom of the pineapple
Twist or cut off the leaves and about an inch and a half off the top and bottom of the pineapple. If you like, you can use the top and leaves as part of the table decoration.

Place the pineapple vertically on its base. Notice the dark brown “eyes” along the edge of the pineapple. They run along with the pineapple and have a very unpleasant taste.

Place your knife on top of the fruit just behind one of the “eyes. Cut the skin of the fruit from top to bottom, turning the knife slightly from the top and bottom, circling the shape of the pineapple.

Final cleaning of pineapple
Cut off the rest of the pineapple skin, cutting from top to bottom along each row of eyes. Your knife should be behind the eyes at about a 45-degree angle. Don’t try to cut too many peels at once.

After you have completely peeled the pineapple, check the fruit for any peels or eyes you may have missed. Remove any remaining eyes with a vegetable peeler. If you want to cut the pineapple into rings, remove the core and slice to your desired thickness.
